This year, Broc Cellar’s sparkling wine is a scaled-up Pt-Nat. The Chenin Blanc grapes were sourced from Shell Creek Vineyard on an August morning. After a few hours of skin contact, the grapes were directly pressed into stainless steel tanks. Chenin Blanc was added, and the wine was transferred into pressurized tanks while still slightly sweet to finish fermentation.
