Agua Mgica Mezcal Ensamble: A Celebration of Heritage and Craftsmanship
Originating from the bountiful soils of San Juan del Ro in Oaxaca, Agua Mgica Mezcal Ensamble is an homage to the artisanal skills of fifth-generation mezcalero Rogelio Juan Hernandez. This Joven mezcal is a harmonious blend of two distinct agave varieties, Maguey Espadin, and Maguey Tobal, reflecting the richness and complexity of the land from which it is born.
The Craft: A Timed Symphony of Nature and Skill
The crafting process begins with Rogelio Juan Hernandez carefully selecting Maguey Espadin (Agave angustifolia) and Maguey Tobal (Agave potatorum). Once selected, these plants are baked in a traditional earth oven for 24 hours and allowed to rest for one to two days. Following this, a horse-drawn tahona crushes the plants, leading to a natural fermentation process in wooden vats over 7-8 days, nourished by the region’s freshwater. Finally, a double distillation in copper stills produces a mezcal of unparalleled complexity and purity.
