An Artisanal Journey Rooted in Ritual
The Espadin pias are harvested after patiently maturing for 7-8 years, then slowly cooked for 3-5 days in conical earthen pits heated by smoldering ocote wood. This ancient ritual imbues the agave with its signature smoky essence. The roasted pias are then crushed using a traditional tahona millstone to extract the precious nectar before fermentation of 10-12 days in pine vats with only native airborne yeasts. Double distillation in copper pot stills allows the agave’s vivid flavors to shine.
