nimas Espadn y Papalote Mezcal 750ML – nimas Espadn y Papalometl Ensamble is produced by Luis Angeles Reyes in Santiago Matatln,Tlacolula, Oaxaca.
This mezcal is made using agaves Papalometl (Cupreata), and Espadn (Angustifolia Haw) harvested after 9 and 7 years, respectively.After harvest, the agaves are cooked in a conical ground oven, milled with a stone tahona, fermented in wooden vats, and double distilled in copper pot stills.
Tasting Notes
- Nose: Intense presence of tropical fruit, typical of the Papalote, reminiscent of banana, mango, and exotic touches of jackfruit. Volatile aromas with fine mineral and graphite notes. Light notes of fermentation typical of tepache (a traditional drink made from pineapple).
- Mouth: Subtle spicy entrance with green chile flavors, alluding to serrano and cherry peppers. The Espadn brings herbal notes and notes of green banana, but the tropical fruit of the Papalote dominates. A honey and caramel presence. Medium-high permanence, this mezcal is truly designed to stimulate the taste buds.
This mezcal has sweet aromas that carry a subtle minerality. Its flavors arefresh and herbal with a dry finish.
