Description
Derrumbes San Luis Potos originates from the state of San Luis Potos, situated at a high-altitude location on the Central Mexican Plateau. This Mezcal is crafted using the wild agave Salmiana native to the region, which grows abundantly but yields only a quarter of the spirit compared to blue agave. The agave is cooked in above-ground ovens called hornos, resulting in a distinct absence of smoky characteristics. After cooking, a tahona is used to crush the agave, followed by wild yeast fermentation and double distillation in small copper pot stills.
The flavor profile of this Mezcal is both sweet and intricate, featuring notes of cooked agave, chalky undertones, and a peppery spice element.
