Derrumbes Michoacn Mezcal 200ML – The second expression of Derrumbes is an elegant combination of Michoacns iconic Chino and Alto agaves and its unique ancestral distillation technique.
Chino (Cupreata) brings mature fruit notes, while Alto (Ineaquidens) complements a delicate herbaceous character resembling the surrounding pine forests. It is fermented under the red clay floor of the taberna in pinewood-lined pits to protect it from low temperatures to be distilled in Michoacns Philippine-style stills made of wood staves and copper over direct flame.
This exquisite sensory experience comes from renowned maestro Guadalupe Perez from the village of Tzitzio.
Tasting Notes
- Nose – a fruity and sweet aroma, with notes of sugar, strawberry, and red apple.
- On the palate, the dominant flavors are strawberry, red apple, and blue cheese funk, which might create an interesting contrast between sweet and savory notes. In addition, the honey and oak finish adds some complexity and depth to the overall flavor profile.
