Description
Derrumbes Zacatecas Mezcal 200ML – made from 100% Tequilana Weber in the village of Huitzila, Zacatecas, right across the majestic barranca (canyon) that divides it from the valley of Tequila. Being so close, Zacatecas is mostly known for mezcal produced in the fashion of Tequila.
The Bauelos family, however, are among the few mezcaleros in Zacatecas that produce traditional mezcal. Pit roasted, tahona ground, and spontaneously fermented, Derrumbes Zacatecas is a rare opportunity to return to experience a more ancient expression of Blue agave.
Tasting Notes
- This mezcal has a unique and potentially polarizing flavor profile. On the nose, the mezcal has aromas of pink grapefruit with sugar, a wet salamander, and a roast on the tequila agave with a slight funk.
- The thin mouthfeel on the palate might suggest a lighter-bodied mezcal. The taste is described as having notes of magic marker and being well salted, which could create a savory and slightly chemical flavor profile.
- The hickory smoke in the finish adds some complexity and depth, but the finish is somewhat rough with burnt and tinny notes. The ethanol burn at certain points could indicate a higher alcohol content or a lack of smoothness.
A mezcal that appeals to those who enjoy smoky and savory flavors, but the rough finish and chemical notes might be less desirable for some.
