Don Amado Mezcal Rstico 375ML – The flagship expression of the Real de Minas Distillery, Don Amado Rstico is made using the historical method of slowly roasting fully mature Espadn maguey hearts on firewood embers before natural fermentation with airborne yeast and a slow double-distillation in ceramic pot stills.
Tasting Notes
- Nose: The mezcal exudes clean and crisp aromas of mineral-rich soil, fresh garden herbs, and roasted pineapple, which are classic and immediately transport you to the heart of Mexico. The nose is refreshing and invigorating, offering a glimpse into the complexity of the spirit.
- Taste: On the palate, the mezcal starts bright with juicy acidity, followed by a full-bodied flavor of minerals and herbs. The sweet undertone of baked fruit adds a layer of complexity, while the woodsy undertones of leather and smoke provide a pleasant balance. The creamy clay finish is a signature of mezcal from Minas and lingers long after the last sip.
- Method/Background: This mezcal is made using traditional techniques, with agaves cooked in an in-ground stone-lined pit, crushed by a mix of hand and machine, and open-air fermented in 1000 liter wooden vats with natural ambient yeasts for 8-20 days. The spirit is then double distilled in 100-liter clay stills, resulting in a unique and high-quality mezcal that is true to its origins.
This mezcal offers a refreshing and complex taste experience, with balanced fruity, earthy, and smoky flavors characteristic of mezcal from Minas. In addition, the use of traditional production techniques adds a layer of authenticity to the spirit, making it a must-try for mezcal enthusiasts.

- Approx. 26 Bx Sugars from Angustofolia Haw Espadn maguey grown at 4,800′ in municipio of Sta. Catarina Minas, Oaxaca
- Halved & quartered (cogollo removed) agave earthen roasted for four days using a mix of guamchil and mesquitewood.
- Cooked maguey macerated with proprietary blade spindle destrozadora shredder
- Fermented together with bagaso in 1,400L pine wood vats using airborne yeast strains
- Double distilled in burner-heated ceramic pot stills to approx. 53% ABV and reduced with triple distilled demineralized water
- No aging, bottled at 47% ABV
