Don Mateo Mezcal de la Sierra Alto 750ml In the traditional technique, the maguey that is selected for jimar is mature; it is sewn in a volcanic braza stone oven with green oak firewood for five days, it is crushed after cooking and is placed in wooden vats adding spring water that is born In the mountains, a slow natural fermentation then begins for eight days, the product obtained goes through a double distillation process and several cuts to obtain a high-quality mezcal.

Tasting Notes
- The nose is reminiscent of key lime pie, with an invigorating and refreshing quality similar to chewing peppermint breath mints.
- The mezcal presents notes of forest soil and celery stalk on the palate and a hint of leafy bitterness. There is also a hearty sweetness resembling oatmeal with brown sugar and a subtle smokiness reminiscent of pine wood.
- Finishes with a spicy kick that exceeds the expected level of 46% ABV, and this spiciness persists into the aftertaste.
This mezcal offers a complex and well-balanced flavor profile that combines earthy and sweet notes with a smoky and spicy finish.
