A Journey from Earth to Spirit
Roasted with Local Woods and Crafted with Care
To create this mezcal masterpiece, Ageo Cortes takes the Madre Cuishe agave hearts and roasts them below ground in an earthen oven for 8-10 days. The magic happens when a blend of local woodsEncino, Mesquite, Palo de Aguila & Yegarechefuel the oven atop volcanic rocks, covered with soil. This process infuses Mama Chuy’s Madre Cuishe with a unique earthy depth.
The Art of Distillation
Yerba Santa and Coffee Elevation
After fermentation in Cypress wood vats using pure well water, the mezcal undergoes a second distillation with Yerba Santa from Cortes’ family farm and coffee sourced from Chiapas. This adds an intriguing twist to the traditional Madre Cuishe profile, resulting in a sensory journey that combines the essence of Oaxaca with the highlands of Chiapas.
