- This mezcal exhibits a complex flavor profile on the palate with sweet undertones.
The production occurs in San Pedro Totolapam, Oaxaca, alongside a river running through the Sierra Madre del Sur in southwest Mexico. The area is situated at an elevation of 961 meters above sea level, with a maximum temperature of 40.4C, an average of 24.2C, and a minimum of 5.6C. The region receives about 540mm of precipitation annually.
In Oaxaca, an artisanal mezcal facility is commonly known as a ‘Palenque.’ Maestro ‘Aarn’ recently relocated his ‘Palenque’ to a hidden location, accessible only by foot and an hour’s journey from San Pedro. Despite the idyllic location, the yearly production is kept under around 6,000 liters, preserving the exclusivity and quality of the mezcal.
The production process of the Maguey ‘Tobal’ mezcal is an exercise in meticulous craftsmanship. It begins with cooking the agave in a roasting pit, then milling it using a stone ‘tahona.’ The crushed agave is then fermented in oak wood vats before being distilled in a traditional copper alembic.
The agave used for this mezcal is the Agave potatorum, which is increasingly challenging to find in the wild. However, it is abundant and sustainably managed by the community in this micro-region. This agave type yields around 1 liter of mezcal every 10-15 kilograms and reaches maturity in about 10 to 12 years.
