Made from 100% wild Coyote agave (Agave karwinskii) harvested in its natural habitat, each precious bottle encapsulates the robust, earthy essence of this region’s terroir. The pias are harvested at peak maturity, then slowly roasted in conical earthen pits using locally sourced wood and wrapped in agave fibers using centuries-old techniques.
The roasted agave is crushed with a traditional tahona mill, with the nutrient-rich fibrous juices allowed to ferment naturally in open-air pine vats before being carefully distilled in small copper pot stills.
The result is a stunningly complex yet elegantly structured mezcal that dances between rustic and refined.
