This remarkable, small-batch spirit is handcrafted by fifth-generation Mezcalero Felipe Velasco Jimnez from 100% wild, uncultivated Sierrudo agave (Agave cupreata).
Sourced from its natural habitat in the rugged highlands of Oaxaca, each Sierrudo pia is harvested at perfect maturity after a journey of 12-18 years. Using traditional ancestral methods, the pias are slowly roasted for days in conical earthen pits using local hardwood and fibrous agave ribbons.
The roasted agave hearts are then crushed with a large, carved tahona stone, and the fibrous juices are allowed to ferment naturally in pine vats. This nutrient-rich mash is carefully distilled in small copper pot stills to preserve the intense flavors.
The result is an extraordinarily robust yet elegant mezcal clocking in at 48% ABV. The aroma alone transports you to the rustic palenques, with bold notes of wood smoke, wet earth, herbs, and citrus. One sip unveils layers of profound flavors – charred agave, roasted peppers, salinity, and hints of tropical fruit.
