Description
Mezcal is a spirit distilled from the agave plant, and while tequila is technically a type of mezcal, the two differ in their production methods. Tequila distillers remove the agave solids before distillation, using only the fermented juice, while artisan mezcal makers include the agave solids in the process. This inclusion results in artisan mezcals from Oaxaca being richer and more complex than tequila.

This Ensamble is crafted by Don Rubn Sols Lozano using wild Cenizo and 60% Espadn agave from the uplands of Durango. The wood-roasted agaves were crushed by hand and fermented in a traditional wood-covered underground pit. The tiny Cenizo is notoriously difficult to distill, but the result is a beautifully balanced mezcal with deep, rich flavors.
