Neta Tobal and Coyote Mezcal

Experience the unique terroir of Miahuatln with Tobal + Coyote, a rare field blend of wild agave. Crafted by Eleazar Garca Vsquez in Logoche, this small-batch mezcal (just 38 liters!) embodies generations of tradition. Eleazar harvested only 20 pias of Tobal and 10 of Coyote from his wife’s family land in San Luis Amatln, where these closely related agaves thrive in the arid, limestone-rich soil. The Coyote agave here is particularly special, a natural hybrid resulting from the pollination work of bats, hummingbirds, and bees, blurring the lines between Agave karwinskii and the Tobal hybrid complex.
Tasting notes:
- Aroma: Opens with a vibrant minerality reminiscent of the rocky, tierra blanca soil, intertwined with delicate floral notes and a subtle sweetness of cooked agave. Hints of smoke and earth add depth.
- Palate: The initial sip reveals a complex interplay of flavors. The earthy notes of the Tobal are balanced by the bright, slightly fruity character of the Coyote. A distinct minerality persists, complemented by hints of citrus, spice, and a gentle smokiness. The mouthfeel is smooth and velvety.
- Finish: The finish is long and warming, with the minerality and subtle sweetness lingering. A gentle smokiness and a hint of spice remain, leaving a lasting impression of the unique terroir.
Eleazar’s meticulous process, from the eight-day earthen pit roasting to the native yeast fermentation in a cypress wood tank, contributes to the complex and flavorful profile. At 45.9% ABV, this exclusive batch, selected for ATLA in New York City, reflects the land, practices, and gastronomic traditions of southeastern Miahuatln.
