Origen Raiz Cenizo is a mezcal made with maguey Cenizo (Agave durangensis) by mezcaleros Ignacio Grijalva Santiago (also known as Don Nacho) and Noe Ramirez Varela.

The mezcal is produced at Rancho El Ojo in Durango, a ranch full of wild agave, sotol, and nopal plants located just outside the Sierra de rganos National Park. The ranch is at a high elevation of approximately 6,350 feet, meaning it can receive frost during winter, adding to the challenging environment for mezcal production.

The agave used in this mezcal is smoked in underground ovens, crushed by mule-drawn tahona, fermented in open-air oak tanks, and double-distilled in copper stills. The resulting mezcal is a testament to the skill and dedication of the mezcaleros, with a unique flavor profile that reflects the region’s rugged terrain and challenging conditions.

Origen Raiz del Espiritu Mezcal is a partnership between the Saravia of Durango and the Corts of Oaxaca. Asis Corts, the son of the Corts, is well known for his other mezcal projects, including Mezcal Dixeebe, El Jolgorio, Nuestra Soledad, and Agave de Cortes. The Saravia family has a long history of working to improve the local economy through business. They were united by their shared passion for their culture and respect for their heritage. Tasting Notes

• The Origen Raiz mezcal has a nose of green vegetables, slight lactic acid, salt, light pear, bubblegum, and strawberry.
• The palate is medium with an oily mouthfeel and flavors of bright vegetal, light pear, strawberry, brine, nutmeg, and cream cheese funk.
• The finish is long, warm, and dry with strong flavors of green vegetals, brine, strawberry, allspice, and smoked pork.
