Tasting Notes:
For his Brut, Thibault blends 80% Pinot Noir and 20% Chardonnay from the communes of Celles-sur-Ource and Landreville. He ferments his base wines in stainless steel from beginning to end, allowing for a natural malolactic. After primary fermentation, the wines settles twice in vat for a pristine and gentle clarification. The wine is then bottled for its second fermentation and thirty-month aging and hand riddling prior to disgorgment. Thibault’s Brut is always a three-vintage cuvee with one vintage serving as the foundation, and the other two accenting it. The Pinot Noir here is center stage with a host of juicy red-fruit flavors and pale floral tones, while the Chardonnay does all the thing
