The Jabal agave is notoriously challenging to work with, and while the agaves are relatively abundant in the wild, there are only a few maestro mezcaleros who know the secret of how to select the right Jabal and how to process it especially through the very active fermentation phase, and come out with a smooth, beautiful-tasting mezcal.
