Cultivated in the highlands of San Dionisio Ocotepec, each Tobal agave is wild-harvested from the mineral-rich yellow soils after patiently maturing for 12 years amid the region’s punishing terrain. This agave’s coveted essence can only be uncovered through traditional artisanal methods.
An Unhurried Artisanal Craft
The mature pias are roasted for 3-5 days in earthen pit ovens fueled by ocote wood. After crushing with a tahona mill, open-air fermentation lasts 10-12 days in pine vats using only natural airborne yeasts. Finally, double distillation in copper pot stills preserves every nuance.
The Wild Culmination
The result is an exceptionally complex yet elegantly balanced spirit with desert herbs, cured meat, and roasted agave aromas.
