Xicaru, a Zapotec word meaning “beautiful,” embodies the artistic creations of mezcalero Fernando Santibaez. Crafted in small batches at his Matatln, Oaxaca palenque, Xicaru Mezcal follows his grandmother’s cherished recipe. Its natural smoky essence is achieved by cooking agave in a conical stone oven fueled with mesquite and ocote woods indigenous to Oaxaca. After the agave is cooked, it undergoes tahona crushing and natural fermentation in an open pine vat. Subsequently, it experiences double distillation in a copper alembic, followed by meticulous blending. Fernando takes great pride in sharing his family’s mezcal tradition with you.
Xicaru Silver, made from agave Espadin, is an unaged mezcal created using time-honored methods passed down through generations. Crafted by Fernando Santibaez, this mezcal presents an earthy character with hints of vegetal notes.
