This handcrafted mezcal is a true embodiment of Oaxacan heritage, blending the ceremonial pechuga tradition with the iconic flavors of mole negro. Crafted from 100% espadin maguey, roasted in an underground stone oven and mashed using a traditional tahona, this mezcal is fermented in open-air pine vats and distilled over a wood fire.
The magic happens during the second distillation, where savory-sweet mole and succulent chickens are added, imparting a rich mouthfeel and a remarkably complex flavor profile. Xicaru’s mole negro is made from scratch using molcajete-ground chilis, Oaxacan chocolate, and fresh ingredients, meticulously prepared over two days at the palenque.
